- <p> At Alice Waters' Chez Panisse restaurant in Berkeley they
- aren't kidding when they say, "Eat your greens." Waters runs
- what could be the world's most environmentally aware eatery. Her
- chickens are nearly 100% organic and contain no antibiotics and
- no added hormones. The fish is carefully chosen from all over
- the country from areas thought to be the least polluted. Scraps
- from the table go to a compost heap that nourishes new crops.
- Even the olives are picked by hand and then cured at the
- restaurant. And it isn't just Earth Day observers who are
- impressed. At this year's James Beard Awards, the eaters'
- Oscars, Waters walked off with both restaurant of the year and
- chef of the year honors, beating out competition from Lutece and
- Le Cirque. Says Waters with typical earnestness: "Food is not
- just about a party. It's about a quality of life."
